End-grain cutting board (large or small) –
especially gentle on your knives

Not only should your wooden board last as long as possible in the kitchen, but also your knives. Did you know that end-grain cutting boards are particularly gentle on knife blades? This is because the wood fibers in these boards stand vertically, and the blade glides smoothly through them when cutting – as if you were cutting into a brush from above.

End-grain vs. Long-grain
Classic wooden cutting boards are made from long-grain wood. This means that the wood fibers run along the surface, from one end to the other. You’re probably familiar with this look from many pieces of furniture.

With end-grain, however, you look down on the vertically standing fibers, like with a sawn-off tree trunk. End-grain thus shows the surface where you can see the annual rings of a tree.

Just imagine: to obtain long-grain wood, you would cut a tree lengthwise, whereas for end-grain, you would saw slices from the tree trunk instead. In my workshop, I then assemble the boards from individual strips, where the fibers point in one direction or another. So, if you want a large or small end-grain cutting board, I will join a corresponding number of (or fewer) wood strips and process them to create your desired pattern. Wooden board for the kitchen – which wood is suitable?

Wooden cutting boards can fundamentally be made from any conceivable type of wood. However, if a wooden board is to be used in the kitchen, it is advisable to pay attention to a few specific properties when selecting the material.

First, the wood should be robust so that it can reliably withstand the high demands of cutting. This resilience automatically determines how durable the board will be. You certainly want to enjoy your cutting board for many years. Because once you get used to your (cooking) tool, you’ll never want to put it down – I know that feeling all too well myself! Finally, it is also important that the wood used is dimensionally stable so that it does not warp over time.

The most popular woods for cutting boards include the following types:

Oak
Oak is frequently used not only for furniture but also for wooden cutting boards. This wood has impressively high strength, which makes it very durable and extremely robust. Thus, it fulfills the most important properties that a wooden board for the kitchen should have. Visually, oak is also absolutely timeless. Its light and rich coloring beautifully highlights the uniform grain of the wood. This will also allow you to clearly see the many wood rays.

The delicacy of this wood type is even somewhat reflected in its strength, as it is slightly softer compared to walnut or oak. But don’t worry: even with its medium strength, maple is still more than hard enough for your cutting board. The advantage of maple is that it is easy to work with and somewhat lighter compared to other wood types.
